As these are internal not external bits you want to varnish, a lower spec varnish will probably suffice but is IMHO false economy. My favourite varnish is Epifanes, available at most chandlers. There are others who will prefer different makes of course.
Use the gloss and dilute 50/50 with Epifanes thinners (also expensive but don't economise) for the first two coats rubbing down with very fine paper in between coats. Then only thin enough to get a good flowing coat for another 4 coats and finish with "ready rubbed" or matt varnish for a really professional finish to be proud of. Most people make a good job of the joinery and then ruin it with a poor finish. It's not difficult, and very satisfying when done properly.
