why do you say Fair winds?

Not sometimes. In my experience the wind is unfair most of the time.

I wonder if it has the same sort of origin as "fair weather"?

Well I say it on channel 16 when I'm trying to get to sleep in Balvicar and that drunken wee tinker Webcraft comes howling through the moorings with his mind on the pub at Clachan Bridge
It goes something like "Fairwinds, Claymore, thanks, out"
