I need to join a wire about 3mm dia. Single wire to single wire. Small transformers so 220v in , 12v out.

What would you recommend?

The connectors won't be submerged but may get damp
It's a tight space so nothing big
I do not want to buy specialist tools as there are only 10 wires and I will not be doing the job again.

mole grips and a match will work, if you can stretch to a proper crimp tool and a mini blow torch soldering iron then you're at pro standard. I know many don't agree but I don't solder joints on a boat, there's too much to go wrong.
 
Sounds like you need to clarify whether the cables will need to be undone, or can be permanently jointed. Since you mentioned a connector I assumed the former, but perhaps you just meant any means of joining them.

If you require a multiplug type connection then AMP superseal is the way to go. When I did a major rewiring job on my boat, all connections to my new loom were AMP superseal and 4 years on, no problems at all.
Seaeye Marine in Fareham manufacture 'Metal Shell' connectors. These connectors are rated to -1000 metres and are reusable.
They're the best wet connector in the world, and come in many different sizes and pin outs.
I'm not connected with the company, but do use and specify there use a professional capacity offshore.

Would you consider them suitable for use above deck? I need a connection for the nav lights on my trailer sailer (needs regular connection/disconnection for mast up/down).
