You'll hardly notice the difference after all that work IMO.
But I have found from experience that if you clean the hull and prop, and empty the boat of unnecesary gear and junk, you will go a bit faster. Grandmother/eggs alert, but is your present engine in tip-top condition?

Present is fine but am being gifted a 24 with a poorly bottom end.
