Trouble with new engine and boat

I recently brought a new 90 yamaha 2 stroke engine and mounted it on my 18'boat (brand name sea serpent, flat bottom). I have tried different mounting heights and the bow is digging into the water. The boat is certainly off level in the water. I have tried power tilting the motor and no angle seems to work to get the bow out of the water. The previous engine was a 40 yamaha 2 stroke but was not big enough for what I wanted. I am thinking the shape of the boat may be an issue. I need help or some places to call for recoomendations of what to try next.
 
The Sea Serpent web site qoutes 75hp max for a 20' regular bottom and 155hp for a "V" bottom so perhaps you are a little over powered. This does not explain though why you cannot get the bows up. Suggest you try trimming the boat by moving some of the weight from the bows to midships or even to the stern. If you have too much weight in the bows you will not get the bows up no matter how much power you have or what trim angle the ob is set at.

The engine should have come with mounting instructions as to the optimium height of the engine. A good rule of thumb is the anti cavitation plate should be 0~1" below the bottom edge of the transom.
