I don't know if it is only me, but I have "inherited" a Zodiac inflatable that has a very tight carrier bag made of reinforced pvc material. It is always a struggle to fit it back in. I have found that smearing the inside of the bag with washing up liquid helps to luubricate the process somewhat...

We use our electric pump to suck the dinghy empty, it makes an enourmous difference to the space the dinghy takes up....

we had the same problem, till i discovered that the newer models have a more user friendly version, and i found one in the cheap bits bin....or have a larger one run up at the sailmakers....

Sucking the air out with the foot pump works for me, . I have an old Avon. You have to be quick getting the stopper back in though or it starts sucking air back in itself
