I would suggest sealing with epoxy as this is vastly superior to varnish.If the edge is to be covered with a teak rail it shouldnt affect your finish.

Why dont you strip plank one instead in mahogany and Obeche then varnish it will then look the D/Bs

As Chippie says, seal the edges with epoxy & use epoxy to glue the edging strips. What is imperative is to seal the end grain of the ply so that moisture cannot get in. Even with good quality marine ply, moisture will get into the grain and under the varnish if the edges are not sealed. I've found this out the hard way!
