Hole in the existing top is too big
Wallas diesel hob has been fitted at a later stage using a 4mm plate of some odd white material that is somewhat brittle
Has a naff looking bit of allu frame around the infill

So, what material can I use ?
I can support it from below, so it does not have to be load bearing over a span
Obviously heat resistant, although the edges of the Wallas have stayed only warm to touch
I need to be able to cut an odd shape out for the Wallas to fit in
Perhaps rout the outside edge
White in color

Any suggestions ?

I would use a piece of laser cut stainless steel sheet and makes feature out of it.
Do a decent drawing and phone around for a laser cutting outfit, shouldn't be very expensive.
