I have googled a bit and found some interesting information, but does anyone have / know of a list of transmission times / frequencies for weather in the Atlantic (principally North Atlantic)?

If you speak/understand French, there is the daily RFI ocean bulletin (issued by Meteo France), seems hard to beat as voice transmission for a E-W transatlantic
Frequencies are 6175 and 15300, at 1133UTC

is it read quite fast so it is better to use a small recorder to help, they use standard meteorology terms so one really needs to learn a few dozen words to get the information

You can practice if you want on RFI.fr, it is available online too.

not on HF so usually shorter range, there are MF stations from French CROSS (MRCC), Portugal Monsanto Radio, Spanish MF stations Bilbao Coruna etc, frequencies between 1.7 and 2.9 MHz, you may see the list searching country by country on the US Nima site under maritime safety information
