Yes, Greece can be very very quiet.

My parents have what i can only desrbie as a retreat in a place called Trikeri (spelt Tpikepi I think in Greek)

Vas should know the place.

Just a few houses, a couple of tavernas and a donkey :)

My parents dont rent theirs but I can give you the low down on transport etc.

sure do! (your r is written as p or P in Greek so uppercase trikeri is TPIKEPI in greek.)
No cars and 20mins walking across the island if you're slow (W to E), N-S less than 15mins :p
Excellent monastery as well with great history.

spend an week in summer a few years back in a house nearby your parents one (I think the guy that built the villas was our host in his house by the sea)
excellent place, exceptionally quiet, and with a mobo you're only 1.5h from a series of very busy cosmopolitan (noisy/touristy) resorts (Skiathos island)

However, I think this applies to all places!
A couple of EN friends that visited us last summer and toured Crete together were saying that in Ibiza (of all places!) they had some excellent relaxing, quiet time in July! literally minutes away from the big messy lout places. Same in Crete (only not minutes, but less than an hour that you need to drive cross the island and go to the south coast ;) )

So, choose an area/language/climate/culture/history and am sure you'll find the right place ;)
Croatia is exceptionally beautiful but I'm not so happy with the sea temp. Was bloody freezing in mid Sept, would get similar temps in end of Nov-Dec down here.
But then there are some phenomenally cold waters in parts of Cefalonia and Corfu
