Good news, an understanding insurer that's a rare thing!
Although my dealings with Marine insurers have been much more amicable than with motor insurers.
I'd be interested to hear what you find in the way of a leak. If you do not find a significant leak.
I have a theory, that your somthing fouled your mooring, maybe the pennent chain fouled an old anchor at low water. this could have pulled the bow down, once the front edge of the centreboard casing was below waterline she just flooded.
It's difficult to imagine that a fouled mooring could overcome the substantial buoancy of your boat, but it is a possibility. Especially if you find no leak.
