Shore power battery charger

So may be one 25A thingy is enough?

Normal recommendation for flooded batteries is to have charge current capability of 10A per 100Ah capacity , 15-20A per 100Ah for AGM batteries.
With some manufacturers it invalidates the warranty if you have less (not that I would attach much value to the warranty from any of them, having worked in that industry.)

Now what is the best capacity for 2 banks for 220AH? 40A? or may be a bit more?

Just one question. Once it is set up, can I just leave it and forget about it?
I.e. when I plug in the shore power, it will start without having to push any buttons?

I'd imagine a 40A charger would be fine, bearing in mind the usage times you've indicated. I'd imagine it will start automatically if you tell it to - sadly, the Sterling instructions online seem to be incomplete.
