I have to replace one which has failed. It is SS on to bronze fittings. Should I change like for like or replace with DZR?
 
Yes. DZR. Stainless has no benefit over DZR in this application and indeed can suffer from crevice corrosion in the threads. Corrosion of threads is a common cause of failure in through hulls and fittings - either galvanic action in plain brass or crevice corrosion in stainless. DZR or bronze avoids this.
 
My boat in Greece has a combination of Marelon & Banjo plastic seacocks, fitted in 2008. They work very well & no sign of any issues at all...

Be sure you have space to fit it as they are dimensionally different from metal valves. Tru Design valves from Lee Sanitation are direct replacements for metal valves if you feel the need to go down this route.
