There is a distillery just along the road from me in Norfolk making whisky - they started last year so only about 10 years to wait now until it is drinkable.
My 2 weeks in the Western Isles has changed my view of Malts!
Ahem.
Actually, the youngest sprit to be considered to qualify as a single malt is 4 years.
As it is not in Scotland, their arcane rules do not really count. Hence the Welsh Whiskey - Prince of Wales.
I do suggest that they go straight for a 1st use Sheerry barrel for casking, which will impart decent coulour iin short time.
I wish them the best of luck, and, as a collector as was, I will no doubt go there to sample their wares, and tick off their distillery on my map.
