had to use some force to free one of my (split) backstay Norseman bottle screws and am going to move down the boat and inspect them all ... is there a suitable grease for these things eg copper anti-seize?

Be carefull of grease with a metal content, eg copper. Some metals react with each other in the wet, corrode and seal together for ever. Had this on vehicles and a disc cutter was the only option.

On galvanised turnbuckles I use lanolin which is the traditional rigging lubricant. Should work on SS as well, although you will probably want to wipe exposed surfaces 'cos its messy.
Using any lubricant on SS brings a risk as denying oxygen prevents creation of a micron thin barrier. The result is crevice corrosion.

O use anhydrous lanolin as Gordon suggests. Hadn't thought of the oxygen inhibiting he suggests - I use only a tiny amount, as it goes a long way - a dab on the threads and they always undo with ease.

won't occur if the joint is dry and waterproof.

316 bottlescrews are not a good idea - good riggers always specify chromed bronze which don't gall and don't fatigue the way 316 stainless does.

Anhydrous lanolin, applied hot, is the classic sealant/lubricant. Teflon in silicon grease suspension is an alternative.
