Having just bought an old seahawk with bottle screw rigging adjusters, I was wondering how tightly these should be screwed up.

Try searching through the archives on your title. This subject has been covered exhaustively and I posted a long description less than a month ago.
For wooden boats you need to be a bit careful about overtightening. Otherwise you are unlikely to do any damage unless the boat is structurally defective.
