Restoring tired Sapele

I would guess that the wood would not take kindly to really aggressive abrasion, but a rub down with some fine grade paper and a wipe with a proprietory cleaner would prepare the surface for whatever you wanted to do. If your wood is the same as my Westerly Storm, ordinary varnish will not match the original finish. Unless you are planning to do all the wood, have a word with Caroline at Trafalgar Yacht Services, who are the Westerly experts. They sell some special spirit based stuff that is pretty close to the original. They may also be able to help you with some specific queries.
 
I tried varnishing after stripping the old varnish with Nitromors and it worked well but was very time consumng.
On my current Westerly I used Patina, one coat over minimally prepared old varnish and it brought it up superbly well.
Patina is a gel substance rubbed on with a cloth, they suggest up to six coats on bare wood but I just used one over old varnish.

I have used Sadolin "classic" redwood ( the green tin ) on bleached mahogany, brush it on the bare wood, then rub it off with a cloth, the sooner/more you rub the lighter the colour, then let it dry & then over coat with coats of varnish, worked very well.
