No problem anchoring round the corner from spurn. Personally I prefer to tie up in a marina and relax with a few bevvies which I won’t do at anchor. Grimsby and Hull are good stop overs and people will make you welcome. You can just about make either in daylight from Lowestoft in summer with the right tide. This will make a significantly longer overall trip compared to my preferred option of a straight run Lowestoft to Scarborough. The tide races in and out of the Humber so going up and down channel with the tide is fast. No point in fighting the tide if it’s against you.
The Humber has a lot of shipping and various channels so be ready to keep a sharp look out as you enter or cross.
If you cannot sail up the east coast In fair weather you are not really a sailor.

I did the east coast earlier this year, the navigation was ever so simple, keep the wind farms on your starboard, but the coastline was rather boring.

I'm planning a circumnavigation of the UK next summer, hoping to do Ramsgate to Edinburgh in one hop.
If you find the East Coast boring, try the continental coast between Cap Griz Nez and Skagen in Denmark.
I would say the East Coast is austere and unforgiving but much more beautiful than the other side of the North Sea.
