Today have a dinghy which is a Higfield 260 Ul https://www.highfieldboats.com/ultralite-260/But tired of the entire bathing platform being taken up by the dinghy, starting to think about a dinghy who can be inflated easily and then packed into a bag when not in use. Then to have an electric pump on the boat so it is easy when you have to use the dinghy. What do you think about that solution? We are 2 adults and 2 children and have an electric outboard.

We have an Excel 270 with inflatable floor and keel, also with an E-Propulsion outboard. It lives in it's bag in the locker most of the time, when required I inflate with an electric pump (very noisy though). It can be a faff if it's just one quick trip ashore but the E-Propulsion makes it easy to remove the outboard and lay the tender against the transom to free up platform space if you want it available quickly for a few days. I like having the platform clear when berthing and when we're staying in a marina.

If a 270 is taking up all the swim platform space then inflating one on the boat will become even more of a faff than just dumping the tender in the water when you need the swim platform (docking aside). Either forgo the tender on trips you know you wont want or need it, or change your davit style to suit.
