Trying to keep things 'simple'

Can i display anything useful from above engine on a plotter ?
Exhaust temp from a separate sensor ?
Def depth and battery voltage.

What kind of interfacing / plotter characteristics should i be googling ??

You can but it's a drawn out job, you won't get anything from the EDC like fuel burn, you can only get temp, oil pressure, boost pressure if you fit a separate sender as you have to convert a resistance to NMEA 2000 via an interlink box which I'm told isn't cheap, over never really seen it work properly.
