National Tastes

Bacalhão is best eaten as Bacalhão a Braz or Conde Barao, there are hundreds are recipies to try and make it interesting but these are the best. Also a national dish in Norway (stockfish?) which is were the Portuguese get theirs from, as there are no local boats in the trade.Read Alan Villiars The Voyage of the Argus. All about banks fishing.

As an aside, I found it is very easy to get good food in Portugal at almost any small café or restaurant. But much more difficult in Spain.

Suspect marmite haters are in the minority of Brits - andouilletes are more a N France delicacy - but Lyon is the gastrocapital of France!!
 
Some traditional fare in Barbados :

Pepperpot - a dish that evolved long before refridgeration was invented - it is a stew which will 'keep going' indefinitely by adding leftovers, so long as it is boiled once a day, and has cassareep (a natural preservative, from the cassava plant) in it.

Steamed pudding and souse - black pudding like in the UK, but with hot chillie peppers. Souse is pickled pig leftovers (feet, ears etc).

Barbecued pig tails - cholesterol heaven!

Cou cou - our way of making polenta, usually with onions and okras. Often served with salt fish (bacalhau).

Flying fish - fried, steamed, grilled, all yummy.

All types of cutters - sandwiches made with a 'salt bread' (white crusty roll) - eg a fried flying fish cutter with lashings of pepper sauce and ketchup - sounds horrible, but very tasty!

Ackee and salt fish - a Jamaican import, but very popular here.

Rotis - a Trinidadian import, they put all burgers to shame. Basically they are curried meat / potato / veggies wrapped up in a roti skin (similar to a chappatti). McDonalds would do well to offer McRotis on their menu.

Mauby - a drink made with the bark of the mauby tree - very much an acquired taste, very sweet, but with a slightly bitter after taste.
