I am going to change the second strop on my mooring to an all chain affair.
The boat is a moody 31, i was hoping to get away with 6mm but not sure if i would be better going for 8mm.
Does any one have the same set up or have any recommendations

I use a 1/2 inch longish NYLON snubber which I use when cruising. It stops rumble coming up the chain when anchored for the night over hard ground.
The idea is to tie the nylon to the anchor chain and then veer enough chain to drop the nylon below the water..
This saves the chain rubbing your a/fouling when tide rode.
as for mooring,the above applies as well. Drop a soft eyed splice in the inboard end of the snubber strop and secure it to the sampson post etc.

6mm chain has a breaking strain (not working strength) of approx 2.2 tonnes.

It is not difficult to see a snatch load on a 31ft boat approaching that figure. * I'd go for 8mm chain (approx 4 tonne BS) and add a heavy weight (perhaps a doubled length of chain) in the middle of the catenary so that it acts as a shock absorber.
