Would something like this be ok as I've just realised only an 8mm pin will pass through the chain , another idea was using 2x8mm d shackles or am I just being too paranoid

I made the mistake of presuming a 10mm shackle pin would fit through 10mm chain . It's the end of a riser chain that will drop over the Samson post.

Make the loop from a separate length of chain.

The shackle and the pin then pass through the three end links
???..
You will need a short piece of long link chain to make the loop - 10mm shackle eyes won't pass through short link chain . Also - a short length of flexible tube to sleeve the chain will be kind to your samson post.

Be nice to your boat and use a decent rope strop to make your boat fast .... not chain to the post.
I was told to use some climbing rope and that will take the strain and stretch and the chain is the back up , not sure how to set it up though yet.

Decent sized rope with spliced hard eye shackled to the chain. (Hard eye means that it has a metal thimble in the eye to stop chafe). Any decent 3 strand rope of sufficient diameter.
Length sufficient to have end of chain just outside roller / stemhead fitting or if its an older boat with more substantial fitting - chain can end just inboard leaving the rope to make fast.

Some people put a large eye in the rope to drop over post ... with a post - that's about best way - but if you have a large cleat - then it is not a good idea - its then better to make the rope fast by OXO .. that way you can let it go even when a lot of strain is on it. If you use an eye - then it means you need to pull in slack to lift it off.

Having had a samson post sheer off ... Oak post on Alacrity 19 in Langstone harbour ... - I then decided to have three rope strops ... one main to the post as usual, 2nd was to a mooring cleat of to one side, 3rd was back to mast base. Bit paranoid I admit - but I never had any boat break free again !
The main strop was of sufficient size for the job, 2nd and 3rd were lighter but still capable of holding boat.

Most Harbour Masters have a recc'd mooring arrangement diagram indicating lengths and sizes of chain / rope etc. It may be worth asking HM and treat the setup as a minimum standard.
