Under the withdrawal agreement, you can only do certain work in each EU member state. I can work in Germany but not in Austria, and only in the Czech Republic if I commute in each day.

Doesn't really apply to me as I will be working for a UK entity and it is a fixed deliverable rather than a day rate or salary. I can be at home in UK, in French house or on boat in France doing the work

I work for a UK entity, but I'm not legally allowed to work whilst in several EU countries whilst visiting.

Whilst you may be able to do the work from France, you may not be allowed to under the rules the UK negotiated. My company explicitly allows you to work from abroad, but states that to work whilst visiting the EU you need to organise a visa. Basically means only UK resident EU staff can take advantage.
