Asking myself if its worth cutting ply sheet to create sink covers ?

I've been on boats with them and great for adding \worktop' but then were a PITA when using the sink as they had to be placed somewhere ...

I'm 50-50 on it at present ... so c'mon - convince me yes or no ?

No. My boat came with very well made covers for sink and hob. Just a nuisance to keep removing and installing so have been stored
and unused by me. I have a large table to do food prep otherwise more flat space is not really needed.
Also there are times when I need to rinse my hands and removing a cover with messy hands is a pain, just in the way.

A friend's 6 m catboat had the sink just beside the stairs from the gangway. Often you walked with shoe sole on the sink rim.
For sake of hygiene I very strongly convinced him to rig a sink cover.

I have a separate chopping board but always seem to need access to tap and sink doing food prep?
It's not ideal in a small galley such as ours but our cooker is gimballed on 2 lengths of track so it can be pushed outboard to expose more worktop.

Also our meals tend to be very simple, which helps a bit.

I have a galley with twin sinks but I also have a largish work top opposite the sink so I don't need to sink work top but with your galley

In your case I would make a work top the would cover both sinks but would hinge up and have a clip to whole the work up when using the sinks.

If you use slide off hinges you can also remove the work to or keep it in place as the case may be.

I would also consider a similar work to over the cooker hop giving lots of work area for food preparation and servicing

Hinged did cross my mind - it could provide a splash back to stop any water getting on that bunk ...

Question is - the woodwork is very nice there - do I want to start adding holes for screws / hinges etc. ??

The Hob ? That's quite high compared to surrounding .. any cover would make that more.

Depends on whether you value the extra worktop space. Sinks are only used for short periods when they need to be open and are good dumping grounds for things when not in use. So covers useful. The first photo shows my original galley with the inset sink and cover on the left. The cooker has a cover that hinges down from the bulkhead. The sink cover stows under the cooker when not in use. Second phot shows the revamped galley (not quite complete) with the formica covered by American Oak veneer including the sink cover.

Suggest you make the cover in 2 parts and stepped so that it does not slide when on the sink.

With a double sink, it's worth making a cutting board that fits in one of the sinks. We use a piece of cutting board. I fitted 4 rubber feet to it so it locates on the sink rim. With the rubber feet, it works great on the counter top and doesn't slide around.
