Hope this works.... Video of what we did in the end. We modified option 2 slightly by getting a local steel fabricator to weld a washer on top of the standard hex head bolts, so that it would have some grip above the top skin, without poking above too much to impact the teak insert when it goes down. A second hex nut on the thread in the middle of the core to give it a bit of grip in the epoxy. Hopefully this will do the job. Many thanks all for the input which went into the melting pot.
