Unless the hatch is the forward underwater escape hatch, then 305 will be fine. It's corrosion resistance is on a par with 304, but is easier to cold draw which is how the hinges are made.

But any stainless can show bleeding and dis-colourisation, so work some 3in1 oil into the pivot and rub the rest with an oily / lanocoted or metal polish coated rag if you're fussy.
