What kind of boat, shortening the settee seems extreme and and will damage the value of the boat forever. I am a joiner and have had considerable experience in fitting kitchens and equipment into camper vans. there is nearly always someway to shoehorn something into a small space with a bit of imagination.
removing the outer cabinet maybe daft, it leaves you with no warrantee and probably dangerous equipment.
post some more pictures and a plan of the layout or a link to a website.
She is a Sunbeam 44. More photos below - not of Nooka but sisterships from various vintages but the important bits are essentially the same. We have the forecabin with the lower cupboards and a berth on top. The cupboards are too shallow at the bottom. One option would be to extend them upwards to be like the alternative forecabin design (that would offer the added possibility of building in an additional fridge freezer, but with only 5 berths including that (excepting the saloon) I am slightly reluctant to do that. The hanging lockers either side of the aft cabin are again too shallow at the bottom because of the hull shape and not really any room to build upwards. Nowhere in the galley. Hence the saloon...
