How do I measure amps?

Actually, it's the current passing through which matters, not the power. The shunt has no idea what power is going through it because it doesn't know the voltage drop to the other side of the circuit..
 
A 100 amp shunt with a large inverter ????

How large? A 1200watt inverter will require more than 100amps. Just look at the current required by the load to see what shunt rating you need.
