How close will your boat point.

Okay, I can make you all feel better, we tack through about 100 deg mag.
Did Falmouth to Dartmouth in 9 hrs, so who cares!


We care about pointing angle when we have to turn around and go back to Falmouth.
OK I race, but even for a cruising boat, I want something that goes well up wind. That said, when you tack through 100degrees, you can still make good progress if you are always on the better tack. But those passages where a cruiser-racer will lay the headland easily and the ketch will end up motoring, I'd prefer the cruiser-racer.
 
a tack angle of 80 degrees for a cruiser/racer is nothing exceptional.

Actually 80 degrees is quite hard. Some simple math:

Lets take perfect conditions, flat water, new sails and a clean bottom

Apparent wind angle: 27 degrees
True wind speed: 15kts
Boat speed 7 kts
Leeway: 2 degrees

That produces a tacking angle of 82 degrees

Now lets add some waves and 3 year old sails and a bit of bottom roughness:

Apparent wind angle: 35 degrees
True wind speed: 20kts
Boat speed 7 kts
Leeway: 3 degrees

That produces a tacking angle of 99 degrees

When I refer to tack angle I am refering to compass heading so I do not take into account leeway. I totally agree with you about waves etc. but we have all been talking about those ( very rare ! ) times of perfect conditions with a nice breeze and flat water.

Wind Shear

Seem to get closer on port than stb. Now why would that be?

As has been said, wind-ometer alignment is a prime suspect.
But this can be a genuine effect, because the wind at sea level may be backed relative to higher up. The jib is operating in a lower level of breeze than the windex.
You sometimes find that to keep all the main tell tales happy, you need more kicker on one tack than the other because of this effect.
 
Whenever my partner and I are trying to get the best out of the boat to windward she helms ! I am completely pants at it in comparison !

Same here but the Monitor windvane is an even better helmsman than either of us. It never tires, never loses concentration, never wants a cup of tea and never wants to go for a pee!
