How can I fix my anchor to my deck

As previously suggested the chain pipe deck fitting should face aft.
 
My plough sits on and is lashed to some white plastic blocks designed and bought specifically for it

The W. Berwick which I crewed simply had the anchor lying on the deck lashed to one of the pulpit legs. That was perfectly satisfactory for all the cross channel sailing we did in all weathers that we encountered.

The one place we would not have stowed it was on the bow roller!

Interesting, because in the bow roller is the place where most stow their anchors (certainly in the Med). Perhaps a reason, infrequent anchorers and frequent marina haunters?
My current anchor has to be stowed, ready for use, in the bow-roller it can't be passed through the pulpit without dismantling - but then like some others I anchor about 150 nights a year.
If you do stow in the bow roller, either a drop-nose pin through the stem. or a couple of lashings hold it in place.
 
Just as an aside, this owner is a little worried that one anchor may be insufficient.:)

Again, you'll find that people who anchor a lot will carry two anchors in their bow rollers - certainly nearly all the circumvavigators I've met do that.
Perhaps were seeing a re-run of the Hans Christian Andersen story about the Kings Suit?
