Is it unlucky to stow them open end down? If you sail alone then me thinks they are easier to grab and pull down to sea level in lucky mode for self rescue, but harder if not alone for a crew member to deploy. Maybe mounts should pivot?

Your reflexes will need to be extraordinarily quick to grab a horseshoe in the couple of seconds between hitting the water and the boat being past you.
A better idea for self rescue when single-handing is a "last chance" line - a long floating line trailed astern from a cleat with large loops at regular intervals.

Regarding the luck issue, I'm told that if they are upside down the luck falls out, but if they are the right way up witches may decide to sit in them. I suggest that you glue the luck firmly in place before inverting them or else buy a good witch repellent. On the other hand, witches are said to be unable to cross water, so that may not be a factor.
