I have a NASA EX1 exhaust temperature alarm to fit. The idea is to drill a hole through the exhaust with the supplied drill bit and fix the sensor with also supplied heat resistant cable ties. I would like to also use some sealant around the sensor to ensure no gas leaks but I'm concerned about it catching fire (I honestly don't know what the injected exhaust temperature is 15cm downstream from the elbow). Any recommendations on a suitable sealant?

Normal flexible marine exhaust hose has a maximum temperature rating of 120 C so you certainly will not get that hot otherwise you would have a much bigger problem than a little gas leakage. As the sensor is pushed into the hole in the rubber hose wall I don't see why you would meed any sealant at all. The fitting instructions do not specify any.
