Has anyone sailed Portugal to the Canaries in January?

From Gib, yes. So same thing. Its nearly always downhill and there are a couple of safe pit stops in Morocco if it kicks off. Should take you around 6 days and should get tradewinds.

Forecasting is a bit more steady without having to second guess winter dartboard depressions.

We've done it a couple of times and the forecasting was spot on. Our reason was the difficulty of finding a berth in the Canaries. We left the boat in the Algarve from September/October and the went to Canaries and on to the Caribbean.

The berthing gets easier in the early new year as the crossers have generally left. It's bonkers here as usual right now, people anchored off waiting to get a berth for a couple of days. Lots of catamarans... :)

If I were heading that way, I would keep the boat in Madeira till all the ARC-ers have left the Canaries before making my way there.
When I last looked, Porto Santo offered some very good rates for October/November.
