Apologies if this has been covered before but for the first time ever I have the right boat and a three week window were I could actually go some where. Nothing to outrageous but with Covid and Brexit do I have any options. We would love to visit Holland for example but I can see us just cruisibg around the east of England again.

You can visit anywhere that'll let you in. Its not really encouraged though and you'll have to isolate when you get back plus pay for all the covid tests etc. Its up to you whether you think thats worth it.

Most countries have pretty comprehensive guidance, such as this for the netherlands.

I'm sure if you come up with a shortlist of countries you would want to travel to, then do due diligence, you can decide for yourself what you want to do.

Depending on the budget, if you want to get further afield, maybe you could look into doing a one way trip over 3 weeks to the west coast then shipping the boat home, or leaving it there till you can sail it back. Hard to know without knowing more about your situation. Three weeks on the east coast might get a bit boring - it would for me.
 
Does that 3 week window include isolation time when arriving back? Going abroad with only 3 week window is I think risky this summer when Covid restrictions can be changed at short notice. As things stand at the moment, you will have to isolate on return and the necessary tests are expensive.

Not just on return. On entry to the Netherlands (and many other EU countries) you are quarantined for 10 days.

So to do the cruise you need a PCR test to travel, then enter 10 days of quarantine on arrival (and it's checked, not just someone from a call centre ringing your mobile to ask if you're at home like in the UK). Then you need to pre-book the government sanctioned day 2 and 8 tests, have a further test, travel back to the UK and then isolate for 10 days.
 
Thanks guys. That was my understanding as well but I thought Id ask just in case I was out of date or some one knew of other options

Then do so.
Rules and "other options" do not make the virus less applicable.
