Gas regulator pressure gauges……

Do you mean a pressure transducer? If so, that's not going to tell you contents just vapour pressure the same as a pressure gauge. Weight dependent resistors (load cells) might feasibly give an indication of bottle weight hence contents.

As I suggested. I even suggested a way to compensate for the differences in the empty weight of the LPG tanks but was shot down.

Just weighting for a display to test it out using this project as a starting point. https://circuitdigest.com/microcontroller-projects/arduino-weight-measurement-using-load-cell

Anyone tried weighing something electronically on a boat? Other than anchored flat calm it's near impossible. On a set of digital scales anyway.

Same thing with measuring the levels of fuel and water in your tanks. In most cases it when you are moored and anchored in calm water that you really with to know the levels of you liquid stores .

Damping could be included into the software if you think its necessary.

No. But have you tried introducing "pressure dependent resistors" into a conversation without further explanation? I am mystified.
