Hi my galley worktop is delaminating, both around the fridge openings and also the sink.

I can let the whole thing dry out for a couple of months but would like to get them stuck back down, so what would be the best glue? Epoxy or some sort of contact adhesive? And is there a tried and tested way to get it right under the laminate, the delamination extends about six inches round the sink.

If the laminate is Formica (or Laminex) it has to be mechanically help down by the sink or a molding.
 
If it's just the edge of the laminate that's lifting, 2 part superglue may be the easiest. If you squeeze some part one in, then weight the laminate down and spray the activator around the edge, it will harden the edge almost immediately and then the rest hardens more slowly as the reaction spreads through it.

The work tops are ply and seem fairly dry- they havent expanded at all yet. DInt think the top is formica as the sink just rests in the cut out with out any mechanical fixings.
 
If the sink is just sitting in the cutout it isn't properly fitted. There should be a clamp in each corner that can rotate under the work surface and then be tightened up from below. This then pulls it down on to whatever sealant is in place such as neoprene strip. That stops any water getting under the sink and attacking the ply edges.
