Thanks for all the help so far. We won't be towing it all the time probably a couple of times a year. I have quite a bit of experience driving heavy plant machinery etc so the towing doesn't scare me too much, I can understand how it can be a bit of a hassle though.
I have had a look at s23s looks like a nice boat but I've also seen a four winns 268 and a ringer fiesta 270. Any opinions or things to look out for on these?

Both of those are slightly bigger boats then the S23 so you will get a bit more cabin space. They also have walk through screens so you will lose the side decks which again gives them a bit more interior space.
It will all come down to personal preference. If you (or the other half) are happy to walk down the roof to access the bow then you will gain more interior space from that layout.
Take note of exterior fixtures and fittings. Some of the US boats have very small cleats (even on the larger boats) and very few places to hang fenders.
