Have to remove recently acquired boat from Cobbs Quay on Tuesday. I don’t know this area but the chartlet in Reeds indicates as little as 0.3m in the channel across Holes Bay and there will only be 1.9m rise of tide at morning HT. Draft is 1.95m. Where is best depth in the channel?

Ask the staff at cobbs quay would be my suggestion.
 
The most you get there is about 2m, so I can’t see you’ve got a big issue there unless high pressure or / and weather cause the 1.9 forecast to drop to below 1.6. Assume you’ll be motoring and a at or a bit before HW. Not a lot of clearance but enough to float. Might be worth lightening the boat as much as sensible, eg drain water tanks and don’t refuel or load tons of gear on board. Where are you heading to?

No problem getting out of Cobbs if you follow the channel. Plenty of deep draft boats moor there. As the chart in post#4 shows if you keep to starboard side except for the first dogleg where middle is best you will be fine. Gets a bit "busy" further down near the RNLI with moorings but plenty of water. once through the bridges deep water all the way out to the Haven..
