I made my own strip flooring using Iroko and holly strip

You might want to consider using solid iroko boards and leaving the surface bare. My fully varnished boat has bare iroko boards which are not slippy and require zero maintenance. To me the concept of a varnished floor on a boat is madness.

Not if you use proper floor varnish which is both non slip and very durable - think of sports halls and dance floors which get far more abuse than the cabin sole of sa boat.

That's true, there are some great durable commercial floor finishes. However, I'm not too sure what they are like when they get wet, you often see signs saying "Slip Hazard Wet Floor". Commercial areas also tend to use special floor mats by their doors so that sand and grit doesn't get on the floor. But yes, if you are going to varnish a floor, a proper commercial floor finish would be the way to go.
