I'm looking for a good quality book that covers the Day Skipper/Coatal Skipper syllabus. I already have the RYA Navigation Handbook and related Exercises. Any recommendations?

Try the publishers Fernhurst. They publish a range of books covering the various elements in the syllabus. Sorry don't have their details to hand but a search on Google will throw up a few details.
