So, probably best to
Get a boat that's sailable for at least one season and then learn as I go.
The reason I was asking for a yard that would let me work along their engineers was the idea that this would be a great way of learning. And naively I believed that it would save some money, basically apprenticing with the maintenance of my own boat....
Back to the drawing board it is....
