Anchor Rope Size

Depends on the size of chain if you are going to splice it in. 8mm chain will take 12mm comfortably and 14mm at a pinch.
 
If you are buying the cordage from new then anchor plait is a more tactile rope to use than 3 ply. We use 3 Ply, that's what we had, but I'd go for anchor plait with an empty locker.

As has been said, comfort is perhaps more important than strength. Although 12 mm is strong enough, as evidenced by my snubber of 11 mm nylon that has held a 34 ft boat many times in winds of up to 45 knots, I would hate to haul an anchoring length of it in without a windlass. My kedge has a short length of 8 mm chain with 16 mm Anchorplait shackled to it. This is very comfortable to handle, does not tangle and has so far resisted going stiff as three-ply nylon rope does.

Rob want to splice said cordage into chain. I had always though a long splice of the nylon through the links was the best splice but riggers I talk to here suggest splicing an eye into the last (or first) link is better and stronger.

Either will work. Personally prefer splicing into the chain as it seems to run better through the windlass.
 
I think their specs are pretty good, of course if you prefer to save some cash and underspec - waking up as you pass Start Point at 2 knots will be nice, but you will have lost that anchor.

Keeping the rope big enough to comfortably handle, about 12mm min, will result, in this case, of a rope that is plenty strong enough.
