Advice on varnish sought

I am doing some maintenance on a Cornish Crabber 17.

I am a bit unclear about the pros/cons between one pack and 2 pack varnish. I once asked CC about varnishing the rudder/tiller above the waterline and they said any 2 pack will do. However, I had already by that stage (about 12 months ago) put on a coat of International orginal (one pack). I also have some other bits of woodwork to do - sole and locker covers etc which seem to be varnished marine ply.
I'm wondering whether I can put 2 pack over the one coat of one pack or just carry on using one pack - is 2 pack more resistant to sea water/UV?
 
I would stick with the Schooner. It should overcoat the existing stuff fine and will be easy to touch in at a later date.
If you rig a simple cover on the tiller, the traditional finish will last years. Two pack might be worth considering if you have loads to do, eg hull & topsides.
