I am in need of a 24 volt power source so intend to wire two dedicated 12 volt batteries in series using an isolator switch beween the batteries so I can charge at 12 volts when not in use.
If I use say two 60 AH batteries do I get the equivalent of 120AH discharge rate at 24 volts or still 60AH?

You will have 60AH at 24V - I don't like the idea of the switch and 12V charging - much better to get a 24V charger.
 
My bowthruster requires 24volts so there are 2 x 12v batts which are connected in parallel for charging and in series for running. A Vetus "black Box" does the switching automatically and the system seems to work OK.
