can you store epoxy paint once it is mixed with the hardener?? its hard to guess how much you need to mix and always end up with a small amount left over. when your appying a few coats it would be nice to use the left over bit on the next coat. would this be a big no no??

The point is that mixing the 2 chemicals starts the chemical reaction that cures the paint.
Most paints cure by some reaction, with moisture from air, with oxygen, or in this case with the other chemical.

Only mix what you need.

Epoxies cure by a chemical reaction between base and curing agent as already said. They do, however, need a defined temperature for that reaction to take place at. For DIY products usually 5-10C. If the reaction is stopped because temperature is too low it will start again when temperature rises although there are often side effects such as amine bloom you need to be aware of.
I've never tried putting mixed product in a fridge to stop reaction but from comments above maybe others have. Could be worth a try I guess but personally I would rather just mix the right amount in the first place!
Bear in mind epoxies will often exotherm as part of the curing process, expecially when left in a tin or mixing pot. If that happens it's probably to late to stop.
