I'm about to replace the pear shaped zinc anode on the boat but firstly I'm going to have to cut the bolts off (badly rusted) to remove the old one.
Is there any good reason I shouldn't replace these bolts with stainless ones? On an anode companies site they would supply galvo'd ones but at over £7 each that seems excessive.

Anodes are most conveniently fixed with special studs which allow the bonding cable to be permanently attached on the insde. They are usually zinc plated ( or galvanised ??? ) to prevent surface rusting while not afloat.

Stainless steel fastenings are available ... They make it easier to undo the nuts to change the anode without disturbing the internal bonding cable(s) and look flashier on a flashy mobo.
