I would be interested depending dates etc. What would I like to cover theres a good one, so much but maybe something dealing with engine and tab trimming
 
Berthing techniques for twin shaft boat without a thruster ...

Parallel sideways berthing to / departing from a pontoon, and without wind or tide advantage. Berthing effectively onto a gusty wind off pontoon, again no thruster. Berthing with confidence into awkward gaps, especially astern runs into a narrow trot with the berth a gap along the trot.

I have read up on the former, but not managed it as I keep forgetting where to put the throttles and rudders. For the other two my weak spots when I will most likely mess it up.

For some reason when I get the boat running nicely astern I will then have a rush of something to the brain and will fiddle with the throttles just when I don't need to then all goes awry.
 
you missed berthing blindfolded..

Used to do that. It's a good way of improving communications skills.
Person on the helm is blind folded. Trainee instructor has to talk them through as they berth the boat.
They soon learn precise communication is everything.
(If you do try this the person on the helm should be experienced so they can recover from a tense situation if it all goes wrong.)
