who is the Nimbus expert on here?

I never really measured it that accurately, but I would guess about 1.4mpg. There were quite a few around last year for sale and most are in good condition. Mine was a 2002 model and at the tail end of that year they changed the name to 380 Commander from 370 Coupe.
I would look at any boat from that time on, before that the spec was lower and they fitted 4 cylinder 230hp Yanmar engines. They were quite noisy and lacked the grunt to get a dirty hulled boat on the plane.
 
The mainly difference between 310 and 320 is that the stern is put a little bit further aft. Thus giving some 30 cm longer aftdeck. This mean you´ll find a L-shaped sofa(one part foldable) instead of a straight one. To be able to keep the size of the bathingplatform this has been built a little bit(30cm) more aftwards giving the boats tot length another foot.
In addition the cockpitroof is a bit longer, rebuilt handrails and a new engine, Nimbus has refined an allready nice boat.
The "delamination" mentioned above must originate from problems with innerliners spotly come loose from hull. This is a not so rare problem amongst many boatbrands using this way of building.
