which folding bike?

Just to give you a bit of choice, I can recommend Dahon. 2 of their bottom end of the range Boardwalks have been on board for 3 summers. With a bit of care, they are staying fairly rust-free. About £250 each, 3 years ago. Probably not as good as Bromptons but they are fairly rideable we find.

Unless your going to do lots of miles you dont need anything too flash. Mine is a single speed folder from compass marine which cost about £70 3 or 4 years ago.

You dont need exotic metals, dry it before you stow it and wipe over with an oily rag.

I have done several 10 to 15 mile rides but wouldnt go much further on it.

Have carried 3 gallons of fuel on the back and a load of shopping.

The stowage bag is quite essential I think. It keeps salt spray off when its in the dinghy going ashore also protects the bike and boat from knocks/scrapes.

On the subject of bikes on boats (but not folding as I can't justify the cost) I have tried evertyhing to stop the chain rusting after exposure to a bit of spray while the bike is tied on deck - without success.

Has anyone come across anything that will keep the chain from forming a solid belt of rust! (apart from leaving the bike in the shed)

My guess whould be that the best protection is the wax based motorcycle chain lubricant - just make sure you use something like a hairdryer to get the chain warm first.
